Description

Celery seeds (Apium graveolens) of Egyptian origin, from the carrot family (Apiaceae); the plant is also known locally as karafs or salary. It is a herbaceous plant that can live for two years and grows to roughly one meter, resembling parsley but larger and thicker, with a distinctly different taste and smell. Its stalks and leaves go into salads, soups, green juices and marinades. Because the seeds are tiny, they are first sown in a nursery bed, optionally mixed with sand for even spreading, and the seedlings are later moved to their permanent spot. The summer crop is sown in January and February and transplanted after about two months; the winter crop is sown in July and August and transplanted after about six weeks. It prefers a cool season with warm days and cold nights, plenty of sun, organic-rich, well-drained soil with a pH of about 6.0 to 6.5, and regular watering without waterlogging. The seeds are for planting, not eating, and should be kept sealed in a cool, dry place.
